Chorizo and Egg Burritos (or Tacos)

I whipped this up the other day for lunch–it only took about 10 minutes total. This can work for breakfast, lunch, or dinner.

1 chorizo sausage, chopped

Pat of butter

4 eggs

1/4 teaspoon chili powder

Splash of milk

2 tablespoons chopped cilantro

Flour or corn tortillas

Melt the butter in a skillet over medium heat. Add chorizo and brown, about 7 or 8 minutes.

Meanwhile, whisk the eggs in a bowl along with the milk and chili powder. When chorizo is browned, pour the egg mixture over the chorizo in the skillet, then add the chopped cilantro. Scramble all the ingredients until egg is cooked as you like it. Salt to taste and serve inside tortillas. Serves 2.

And this is healthy? It sounds delicious, but assuming you don’t want me to wash it down with some lipitor, how does it fit in to the big picture?

Hi Michael! Everything in moderation–chorizo on a very regular basis isn’t ideal, but if you make this recipe once a month or so, there’s nothing to worry about. The important thing is that you’re making home-cooked food, so you have control over portions and ingredients. You can choose to use chorizo made from pasture-raised pork. Corn tortillas are healthy, cilantro is healthy, eggs are healthy. Enjoy!
